The cellar

The cellar is the magical place where the grapes are transformed, where a year's hard work in the vineyards will reveal a vintage. The hardest part has been done...but the most important part, the wine, is still to come. These are great moments, because we've done our utmost to achieve perfect ripeness, sometimes adapting to difficult climatic conditions; now it's up to us to achieve the best possible balance in our wines.

Much of the winery is concrete, equipped with thermoregulators for vinification. We also have enamelled steel vats for storage, stainless steel vats for white wine, and an ageing cellar with oak foudres and demi-muids.

The red and white grapes are picked entirely by hand and sorted a first time on the stump, where the picker has two buckets at his disposal. A second sorting of the grapes is carried out on the platform of the tractor that will bring them to the winery. This is followed by the classic vinifica- tion process, in which nothing is left to chance: temperatures are controlled, fermenting musts are pumped over to give the yeasts enough air, the pomace is pigmented to extract all the available matter... pneumatic pressing... nothing could be more traditional, but you just have to know how to do it at the right time.
